Description

A delicious and vibrant salad featuring grilled prawns skewered and served with fresh vegetables and a zesty dressing.


Ingredients

  • 12 oz Prawns (Substitute with shrimp if needed.)
  • 1 Cucumbers (Lebanese cucumbers offer a milder flavor.)
  • 2 Carrots (Julienne for quicker cooking.)
  • 2 cups Cabbage (Mixed greens can be a tasty alternative.)
  • 4 Green Onions (Regular onions work in a pinch.)
  • 1/2 cup Coriander (Parsley can be used as a substitute.)
  • 1/4 cup Mint (Skip if you don’t have it.)
  • 2 Chilies (Adjust based on spice tolerance.)
  • 1/2 cup Peanuts (Roasted or unsalted preferred.)
  • 1 cup Snow Pea Tendrils (Try pea shoots as a replacement.)
  • 1/4 cup Lime (Essential for brightness.)
  • 2 tbsp Fish Sauce (Substitute with soy sauce for a vegetarian version.)
  • 2 tbsp Caster Sugar (Honey or agave syrup can be used.)
  • 2 tbsp Peanut Oil (Vegetable oil is an acceptable substitute.)
  • 2 tbsp Reduced Soy Sauce (Regular soy sauce if reduced is unavailable.)

Instructions

  1. In a bowl, whisk together lime juice, fish sauce, caster sugar, and reduced soy sauce until the sugar dissolves.
  2. Soak 12 bamboo skewers in cold water for about 10 minutes.
  3. Thread the prawns onto the soaked skewers and spray with peanut oil.
  4. On a serving platter, arrange cucumbers, carrots, cabbage, green onions, coriander, mint, chilies, peanuts, and snow pea tendrils.
  5. Preheat the grill to medium-high.
  6. Grill prawn skewers for 4-5 minutes, turning until pink and opaque.
  7. Drizzle the dressing over the salad just before serving.

Notes

  • Make sure to soak the bamboo skewers to prevent them from burning on the grill.
  • Adjust the chilies based on your preferred spice level.
