- 4 Green Onions (Regular onions work in a pinch.)
- 1/2 cup Coriander (Parsley can be used as a substitute.)
- 1/4 cup Mint (Skip if you don’t have it.)
- 2 Chilies (Adjust based on spice tolerance.)
- 1/2 cup Peanuts (Roasted or unsalted preferred.)
- 1 cup Snow Pea Tendrils (Try pea shoots as a replacement.)
- 1/4 cup Lime (Essential for brightness.)
- 2 tbsp Fish Sauce (Substitute with soy sauce for a vegetarian version.)
- 2 tbsp Caster Sugar (Honey or agave syrup can be used.)
- 2 tbsp Peanut Oil (Vegetable oil is an acceptable substitute.)
- 2 tbsp Reduced Soy Sauce (Regular soy sauce if reduced is unavailable.)
Instructions
- In a bowl, whisk together lime juice, fish sauce, caster sugar, and reduced soy sauce until the sugar dissolves.
- Soak 12 bamboo skewers in cold water for about 10 minutes.
- Thread the prawns onto the soaked skewers and spray with peanut oil.
- On a serving platter, arrange cucumbers, carrots, cabbage, green onions, coriander, mint, chilies, peanuts, and snow pea tendrils.
- Preheat the grill to medium-high.
- Grill prawn skewers for 4-5 minutes, turning until pink and opaque.
- Drizzle the dressing over the salad just before serving.
Notes
- Make sure to soak the bamboo skewers to prevent them from burning on the grill.
- Adjust the chilies based on your preferred spice level.
