Ingredients

  • 1 pound fresh mushrooms (cremini, shiitake, or button)
  • 1 medium onion
  • 2 cloves garlic
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Sauté chopped onions and sliced mushrooms until softened (5-7 minutes).
  2. Add minced garlic and cook for an additional 1-2 minutes.
  3. Sprinkle flour over the mixture and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in broth while preventing lumps. Bring to a gentle simmer and cook for about 10 minutes.
  5. Stir in heavy cream along with thyme, salt, and pepper; simmer for an additional 5 minutes on low heat.
  6. Blend using an immersion blender until desired consistency is reached.
  7. Serve warm, garnished with chopped parsley.
