- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt butter over medium heat. Sauté chopped onions and sliced mushrooms until softened (5-7 minutes).
- Add minced garlic and cook for an additional 1-2 minutes.
- Sprinkle flour over the mixture and cook for 1-2 minutes to form a roux.
- Gradually whisk in broth while preventing lumps. Bring to a gentle simmer and cook for about 10 minutes.
- Stir in heavy cream along with thyme, salt, and pepper; simmer for an additional 5 minutes on low heat.
- Blend using an immersion blender until desired consistency is reached.
- Serve warm, garnished with chopped parsley.

- For a vegan option, substitute butter with olive oil and use coconut cream instead of heavy cream.
