Description

A delicious layered ice cream cake featuring chocolate cookie crust, strawberry, blueberry, and vanilla ice cream, topped with fresh berries and whipped cream.

Ingredients

Scale
  • 2 cups chocolate cookie crumbs
  • 4 tablespoons melted butter
  • 2 cups strawberry ice cream
  • 2 cups blueberry ice cream
  • 2 cups vanilla ice cream
  • 1 cup fresh strawberries (sliced)
  • 1 cup fresh blueberries
  • 1 cup heavy cream
  • 1 tablespoon confectioners’ sugar
  • 1/2 cup chocolate chips
  • Sprinkles for decoration
  • Chocolate syrup for drizzling

Instructions

  1. Prepare the Base:
    • Mix chocolate cookie crumbs with melted butter until well combined.
    • Press the mixture firmly into the bottom of a springform pan to form an even layer.
    • Freeze for 30 minutes until firm.
  2. Assemble the Ice Cream Layers:
    • Soften the strawberry ice cream slightly by leaving it at room temperature for about 5-10 minutes.
    • Spread the strawberry ice cream evenly over the cookie crust and freeze for at least 1 hour.
    • Repeat the process with the blueberry ice cream layer, spreading it evenly over the strawberry layer, and freeze for another hour.
    • Finally, add the vanilla ice cream layer on top of the blueberry layer, spread evenly, and freeze for at least 2 hours or until completely solid.
  3. Prepare the Whipped Cream:
    • In a mixing bowl, whip the heavy cream with confectioners’ sugar until stiff peaks form.
    • Spread the whipped cream over the top layer of ice cream or pipe it decoratively.
  4. Decorate the Cake:
    • Top with fresh strawberries and blueberries.
    • Sprinkle with chocolate chips and colorful sprinkles for added decoration.
    • Drizzle with chocolate syrup before serving.

Notes

  • Ensure each ice cream layer freezes completely before adding the next to maintain distinct layers.
  • Use a warm knife for cleaner slices when serving by running it under hot water and wiping dry before cutting.
  • Customize the cake by substituting different ice cream flavors or adding layers of nuts or crushed cookies for texture.
  • Store leftovers in the freezer, covered, to prevent the absorption of freezer odors.
