This creamy dip combines roasted red peppers and feta cheese for a delicious appetizer.
Ingredients

- 2 roasted red peppers (homemade or store bought)
- 8 oz feta cheese
- assorted vegetables, crackers or bread (for serving)
Instructions
- Add the peppers and the feta to a food processor.
- Process until smooth.
- Serve immediately with vegetables and crackers, or refrigerate until ready to serve. The dip will firm up a bit as it chills.

- This dip is best served fresh but can be stored in the refrigerator for a few hours.
