Description

This marinated chicken recipe features a tangy mixture of lemon juice and soy sauce, perfect for a flavorful dinner.


Ingredients

  • 1/2 cup lemon juice
  • 1/2 cup soy sauce
  • 1/2 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 pounds chicken breasts (boneless skinless)

Instructions

  1. In a large freezer bag, add the lemon juice, soy sauce, ginger, salt, and pepper and shake to mix.
  2. Add the chicken breasts to the bag, shake, and let marinate in the fridge for 2-24 hours.
  3. Preheat oven to 350 degrees F.
  4. Spray a 9″ x 13″ baking dish with nonstick cooking spray, then remove the chicken breasts from the marinade and place them in the baking dish.
  5. Bake in the preheated oven for 20-35 minutes, depending on how thick the chicken breasts are. The chicken is done when the internal temperature reaches 165 degrees Fahrenheit.
  6. Remove from the oven and spoon the juices over the chicken breasts. Place under the broiler for 3-5 minutes, or until the chicken is golden brown.
  7. Let rest for about 5 minutes before serving. Enjoy!
