Description

Deliciously soft and fluffy red velvet cookies with a cream cheese frosting.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/2 cup buttermilk
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together 2 1/2 cups of all-purpose flour, 1/4 cup cocoa powder, and 1 teaspoon baking soda.
  3. In another bowl, cream together 3/4 cup unsalted butter and 2 cups granulated sugar until fluffy.
  4. Add in 2 large eggs one at a time, then incorporate 1 teaspoon of vanilla extract and 1 tablespoon of red food coloring.
  5. Gradually mix in the dry ingredients, alternating with 1/2 cup of buttermilk.
  6. Drop rounded tablespoons of dough onto the sheet, spacing 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are set.
  8. While the cookies cool, whip together 8 oz of cream cheese, 1/2 cup unsalted butter, and 4 cups powdered sugar.
  9. Once cooled, frost the cookies with the cream cheese mixture.
