A creamy and delightful pistachio salad that’s perfect for gatherings!


Ingredients

  • 1 package (3 oz) instant pistachio pudding mix
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts or pecans
  • 1 1/2 cups frozen whipped topping, thawed
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped maraschino cherries, drained
  • 1/2 cup shelled pistachios (optional, for garnish)

Instructions

  1. In a large mixing bowl, combine the instant pistachio pudding mix with the crushed pineapple (including juice) and stir until well combined.
  2. Fold in the mini marshmallows, chopped walnuts or pecans, sweetened shredded coconut, and chopped maraschino cherries.
  3. Gently fold in the thawed whipped topping until everything is evenly incorporated and the mixture is light and fluffy.
  4. Cover and refrigerate the salad for at least 1 hour to allow flavors to meld and salad to thicken.
  5. Before serving, sprinkle with shelled pistachios for garnish if desired. Serve chilled.
