Description

Delicious sushi taco rolls filled with seasoned ground beef, fresh vegetables, and sushi rice.


Ingredients

  • 1 cup sushi rice (rinsed and drained)
  • 1 1/4 cup rice vinegar
  • 1 tablespoon sugar (for seasoning)
  • 1 teaspoon salt (for seasoning)
  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 cup shredded lettuce
  • 1 medium tomato (diced)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 sheets nori
  • 1 avocado (sliced)
  • 1/2 cup sour cream (for dipping)
  • 1 tablespoon lime juice (for flavor)

Instructions

  1. Cook sushi rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a bowl and fold into the rice. Let it cool.
  2. In a frying pan, cook ground beef over medium heat until browned. Drain excess fat and add taco seasoning. Follow package instructions for seasoning.
  3. Place a sheet of nori on the sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  4. Layer taco filling, lettuce, diced tomato, cheese, and avocado on top of the rice.
  5. Using the sushi mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a bit of water.
  6. Using a sharp knife, slice the roll into bite-sized pieces. Serve with sour cream and lime juice on the side.
