- 1 lb Ground Beef (80/20 blend)
- 1 cup Diced Onions (red onions recommended)
- 1 cup Diced Tomatoes (swap for cherry tomatoes if desired)
- 1/2 cup Dill Pickles (sliced, or use pickled jalapeños for heat)
- 2 cups Cheddar Cheese (shredded, can use pepper jack)
- 4 large Flour Tortillas (or use corn/whole wheat)
- 1/4 cup Mayonnaise (or Greek yogurt for lighter option)
- 2 tablespoons Ketchup (sugar-free or homemade optional)
- 1 tablespoon Mustard (yellow is best, Dijon ups flavor)
- Cooking Oil or Butter (for frying)
- Salt
- Pepper
Instructions
- Heat a large skillet over medium-high heat and add cooking oil or butter.
- Add the ground beef, seasoned with salt and pepper, and cook for 5-7 minutes until browned.
- Stir in diced onions and cook for 2-3 minutes until they are translucent.
- In a bowl, whisk together mayonnaise, ketchup, and mustard to create the sauce.
- Spread sauce on one half of a tortilla, layer with cheese, beef mixture, diced tomatoes, and pickles, then fold.
- Fry the assembled quesadilla in the hot skillet for 3-4 minutes on each side until crispy.
- Remove from the skillet, cool slightly, then slice into wedges and serve.
Notes
- Red onions add a nice flavor, but feel free to use any onions you have.
- For a spicier kick, pickled jalapeños can be used instead of dill pickles.
- Cooking oil can be substituted with butter for richer flavor.
