Ingredients

  • 1 lb Ground Beef (80/20 blend)
  • 1 cup Diced Onions (red onions recommended)
  • 1 cup Diced Tomatoes (swap for cherry tomatoes if desired)
  • 1/2 cup Dill Pickles (sliced, or use pickled jalapeños for heat)
  • 2 cups Cheddar Cheese (shredded, can use pepper jack)
  • 4 large Flour Tortillas (or use corn/whole wheat)
  • 1/4 cup Mayonnaise (or Greek yogurt for lighter option)
  • 2 tablespoons Ketchup (sugar-free or homemade optional)
  • 1 tablespoon Mustard (yellow is best, Dijon ups flavor)
  • Cooking Oil or Butter (for frying)
  • Salt
  • Pepper

Instructions

  1. Heat a large skillet over medium-high heat and add cooking oil or butter.
  2. Add the ground beef, seasoned with salt and pepper, and cook for 5-7 minutes until browned.
  3. Stir in diced onions and cook for 2-3 minutes until they are translucent.
  4. In a bowl, whisk together mayonnaise, ketchup, and mustard to create the sauce.
  5. Spread sauce on one half of a tortilla, layer with cheese, beef mixture, diced tomatoes, and pickles, then fold.
  6. Fry the assembled quesadilla in the hot skillet for 3-4 minutes on each side until crispy.
  7. Remove from the skillet, cool slightly, then slice into wedges and serve.

Notes

  • Red onions add a nice flavor, but feel free to use any onions you have.
  • For a spicier kick, pickled jalapeños can be used instead of dill pickles.
  • Cooking oil can be substituted with butter for richer flavor.
