  • 1/4 cup sour cream

Instructions

  1. Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent. Add ground beef, breaking it apart with a spatula until browned. Drain excess fat. Stir in cumin, chili powder, salt, and pepper. Cook for an additional 2 minutes.
  2. Prepare the Filling: Combine the cooked beef mixture and cooked rice in a mixing bowl. Add shredded cheddar cheese and mix well.
  3. Assemble the Quesadillas: Lay a tortilla flat on a working surface. Spread a generous amount of the beef and cheese mixture on one half of the tortilla. Fold the other half over to cover the filling, pressing down lightly.
  4. Cook the Quesadillas: Heat a non-stick skillet or griddle over medium heat. Place the assembled quesadilla on the skillet. Cook for 3 to 4 minutes on each side, until the tortilla is golden brown and crispy. Repeat with the remaining tortillas and filling.
  5. Serve: Slice the quesadillas into wedges. Serve with sour cream and optional hot sauce or salsa.
