- 2 cups fresh cranberries
- 1 cup cranberry juice
- 1/2 cup brown sugar

- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon cornstarch
- 2 tablespoons water (for cornstarch slurry)
Instructions
- Prepare the Beef:
Preheat your oven to 350°F (175°C). Rub the beef roast with olive oil, minced garlic, salt, black pepper, and chopped rosemary. Let it sit at room temperature for 15 minutes. - Sear the Beef:
In a large ovenproof skillet, heat a little olive oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. - Make the Cranberry Glaze:
In a saucepan, combine cranberries, cranberry juice, brown sugar, honey, and balsamic vinegar. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the cranberries start to burst and the mixture thickens slightly, about 10 minutes. - Thicken the Glaze:
Mix cornstarch and water to create a slurry. Stir the slurry into the simmering glaze and cook for an additional 2-3 minutes until thickened. Remove from heat. - Roast the Beef:
Brush half of the cranberry glaze over the seared beef. Place the skillet with the beef into the preheated oven. Roast for 1 to 1.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare, or to your desired doneness. - Rest and Serve:
Remove the beef from the oven and tent it with foil. Let it rest for at least 10 minutes before slicing. Serve with the remaining cranberry glaze drizzled on top.
Notes
- For extra flavor, marinate the beef overnight with the olive oil, garlic, salt, pepper, and rosemary.
- If you prefer a sweeter glaze, add more brown sugar or honey to taste.
- Use a meat thermometer to ensure perfect doneness.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
