Delicious and easy to make Chocolate Peanut Butter Cereal Bars.

- 2 cups rice or corn cereal (like Chex)
- 1 cup semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar (for topping)
Instructions
- Line a 9×9-inch baking dish with parchment paper, leaving overhang on the sides. Lightly spray with nonstick spray.
- In a large microwave-safe bowl, combine the chocolate chips, peanut butter, and butter. Microwave in 30-second bursts, stirring each time, until melted and smooth.
- Stir in the vanilla extract.
- Gently fold in the cereal with a spatula, making sure each piece is well coated.
- Transfer the mixture into the prepared dish. Press it down firmly using a spatula or parchment-covered hands.
- Chill in the refrigerator for at least 2 hours or until completely set.
- Dust the top with powdered sugar once fully chilled.
- Lift from the pan using the parchment paper, slice into bars, and serve.
Notes
- Store bars in an airtight container for up to a week.
- For a crunchier texture, let them sit out for a little while before serving.
