Description

A decadent chocolate cake soaked with milk and topped with whipped cream.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground cayenne or chili powder (optional for heat)
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • ½ cup hot water
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • ½ cup whole milk
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 2 cups heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Optional: Shaved chocolate or cinnamon for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, cinnamon, baking powder, baking soda, salt, and cayenne (if using).
  3. In another bowl, combine the granulated sugar, brown sugar, and oil. Beat in the eggs one at a time. Add the milk, vanilla, and sour cream, mixing until smooth.
  4. Mix in the dry ingredients, then stir in the hot water last. The batter will be thin — that’s perfect.
  5. Pour the batter into your prepared pan and bake for 30–35 minutes or until a toothpick inserted comes out mostly clean.
  6. Let it cool for about 10 minutes. Then, using a fork or skewer, poke holes all over the top of the cake to help the milk soak in.
  7. In a medium bowl, whisk together the sweetened condensed milk, evaporated milk, whole milk, cinnamon, and vanilla. Pour the milk mixture evenly over the warm cake.
  8. Refrigerate for at least 3 hours or overnight.
  9. Just before serving, whip the heavy cream, powdered sugar, and vanilla until soft peaks form. Spread generously over the chilled cake and garnish with shaved chocolate or a dusting of cinnamon, or even a pinch of chili for a dramatic touch.

Notes

  • This cake is best when allowed to soak overnight.
  • Use high-quality cocoa powder for a richer chocolate flavor.
  • If you prefer a less spicy kick, omit the cayenne or chili powder.
