Description

This delightful lime raspberry cream is a refreshing dessert perfect for any occasion.


Ingredients

Scale
  • 2 cups heavy cream
  • 2/3 cup granulated sugar
  • 5 tablespoons fresh-squeezed lime juice
  • Zest of 12 limes
  • Fresh raspberries

Instructions

  1. In a small saucepan, bring the cream and sugar to a boil, stirring to dissolve the sugar.
  2. Continue to boil for 5 minutes – WATCH CLOSELY SO THE CREAM DOES NOT BOIL OVER.
  3. Remove the pan from the heat and stir in the lime juice.
  4. Allow to cool for 15 minutes.
  5. Evenly divide the mixture between 4 serving containers.
  6. Refrigerate for at least 2 hours, or until set.
  7. To serve, garnish with lime zest and a few fresh raspberries.

Notes

  • Keep an eye on the cream while boiling to prevent it from overflowing.
