A delicious side dish of roasted baby carrots coated in a savory miso glaze.
Ingredients

- 1 lb fresh baby carrots
- 3 tbsp white or yellow miso paste
- 2 tbsp toasted sesame oil
- 1 tbsp honey or maple syrup
- 2 tbsp toasted sesame seeds
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel larger carrots; if using baby carrots, simply rinse them. Cut larger carrots into uniform sticks.
- In a bowl, whisk together the miso paste, sesame oil, honey (or maple syrup), and a splash of water until smooth.
- Toss the prepared carrots in the glaze ensuring they are evenly coated.
- Spread the glazed carrots on the baking sheet in a single layer. Roast for 20-25 minutes, flipping halfway through for even caramelization.
- Remove from the oven and sprinkle with toasted sesame seeds before serving.
Notes
- For a deeper flavor, try adding garlic or ginger to the glaze.
- If you like more sweetness, feel free to adjust the amount of honey or maple syrup.
