Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy. Add the egg and vanilla; mix well.
  4. Gradually combine the dry ingredients with the wet mixture, adding milk as needed for consistency.
  5. Drop rounded tablespoons of batter onto prepared sheets and bake for about 10 minutes until springy.
  6. While cooling, whip together the filling ingredients until smooth. Once cookies are cool, spread filling between two halves.
