Description
Delicious homemade peppermint patties that are easy to make and perfect for any occasion!
Ingredients
Scale
- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons corn syrup
- 1/8 teaspoon salt
- 1/2 teaspoon peppermint extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for dipping)
Instructions
- In a medium mixing bowl, combine the powdered sugar and unsweetened cocoa powder. Mix well using a whisk to break up any clumps.
- In the same bowl, add the corn syrup, salt, and peppermint extract. Stir until the mixture forms a dough-like consistency. If it’s too sticky, you can add a bit more powdered sugar.
- Lightly dust your work surface with powdered sugar. Turn the dough out onto the surface and knead it gently for a minute until smooth and pliable.
- Divide the dough into small portions and roll each portion into a ball. Flatten each ball into a disc shape, approximately 1/4 inch thick. Continue this until all the dough is formed into discs.
- Place the discs on a baking sheet lined with parchment paper. Once done, put them in the freezer for about 30 minutes to firm up.
- While the peppermint discs are chilling, melt the chocolate chips. You can do this by placing them in a microwave-safe bowl and microwaving in 30-second intervals, stirring in between until smooth. If you’re using coconut oil, stir it in when the chocolate is almost melted for a smoother consistency.
- Remove the chilled peppermint patties from the freezer. Dip each one into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing any excess chocolate to drip off.
- Place the coated patties back on the parchment-lined baking sheet. After dipping all of them, you can optionally sprinkle a little crushed peppermint on top for decoration before the chocolate sets.
- Refrigerate the patties for about 20-30 minutes to allow the chocolate to harden completely.
- Once set, enjoy your homemade peppermint patties! Store them in an airtight container in the refrigerator for freshness.
