- 1 cup bell pepper, sliced

Instructions
- Cook the udon noodles according to package instructions until al dente. Drain and set aside.
- In a large pan or wok, heat vegetable oil over medium heat.
- Add minced garlic and ginger; sauté until fragrant, about 30 seconds to 1 minute.
- Add sliced cabbage, julienned carrots, and sliced bell pepper; stir-fry until tender yet vibrant, 3-5 minutes.
- Add the cooked udon noodles and toss everything together.
- Pour in soy sauce and mirin, tossing until well combined and heated through.
- Serve hot, garnished with chopped green onions and sesame seeds.
