- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk (or non-dairy alternative)
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1 cup fresh strawberries (sliced)
- 1 cup blueberries
- 1 cup whipped cream (for serving)
- 1 tbsp powdered sugar (for dusting)
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Preheat a large skillet over medium heat and lightly grease it with butter or cooking spray.
- Pour the pancake batter into the skillet, spreading it out to form a bunny shape.
- Cook for about 5-7 minutes until bubbles form on the surface, then carefully flip and cook for another 5-7 minutes until golden brown.
- Once the pancake is cooked, remove it from the skillet and place it on a serving platter.
- Decorate the pancake with sliced strawberries and blueberries to create the bunny’s face and ears.
- Top with whipped cream and dust with powdered sugar before serving.
Notes
- For a non-dairy version, use almond or oat milk.
- Feel free to add more fruit toppings based on your preference.
