  • 2 tablespoons heavy cream

Instructions

  1. Prepare the Brownie Layer: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving some overhang for easy removal. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Sift in the flour, cocoa powder, and salt. Mix until just combined. Spread the batter evenly in the prepared baking dish and set aside.
  2. Prepare the Cheesecake Layer: In a large mixing bowl, beat the cream cheese until smooth. Add sugar and mix until well combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Carefully spread the cheesecake mixture over the brownie layer.
  3. Bake: Bake in the preheated oven for 35-40 minutes or until the cheesecake is set and the edges are lightly golden. Remove from oven and allow to cool completely at room temperature, then refrigerate for at least 2 hours or until firm.
  4. Prepare the Caramel Sauce: In a small saucepan, melt the caramel candies with heavy cream over low heat, stirring constantly until smooth.
  5. Assemble: Once the bars are completely chilled, remove them from the baking dish using the parchment overhang. Drizzle the caramel sauce over the top of the cheesecake layer. Cut into bars and top each with a dollop of whipped cream. Garnish with fresh strawberries if desired.
