Description

A delicious creamy salmon penne pasta with fresh spinach and sun-dried tomatoes.


Ingredients

  • 12 ounces penne pasta
  • 1 pound salmon fillets
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 2 teaspoons minced garlic
  • to taste Italian seasoning

Instructions

  1. Cook penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat; cook salmon for 4-5 minutes on each side until cooked through. Remove from skillet and flake into large pieces.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant.
  4. Add heavy cream, sun-dried tomatoes, and Italian seasoning; simmer for 3-4 minutes until sauce thickens slightly.
  5. Stir in fresh spinach until wilted, about 2 minutes.
  6. Fold in flaked salmon and Parmesan cheese, then add cooked penne; toss gently to coat.
  7. Serve immediately, garnished with fresh basil.
