Description
A delicious creamy salmon penne pasta with fresh spinach and sun-dried tomatoes.

- 12 ounces penne pasta
- 1 pound salmon fillets
- 2 tablespoons olive oil
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- 2 teaspoons minced garlic
- to taste Italian seasoning
Instructions
- Cook penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat; cook salmon for 4-5 minutes on each side until cooked through. Remove from skillet and flake into large pieces.
- In the same skillet, sauté minced garlic for 30 seconds until fragrant.
- Add heavy cream, sun-dried tomatoes, and Italian seasoning; simmer for 3-4 minutes until sauce thickens slightly.
- Stir in fresh spinach until wilted, about 2 minutes.
- Fold in flaked salmon and Parmesan cheese, then add cooked penne; toss gently to coat.
- Serve immediately, garnished with fresh basil.
