Description

A delicious pasta salad with ham, asparagus, and a creamy dressing.


Ingredients

Scale
  • 8 oz elbow macaroni pasta
  • 1 pound cooked ham (Diced into cubes.)
  • 6 oz cooked asparagus (or any vegetables.)
  • 1/2 cup chopped onions (I used red onions.)
  • 2 celery stalks (Diced.)
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayo
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 teaspoon sweetener or sugar
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chives
  • to taste salt and pepper
  • 1 tablespoon mustard (Optional)

Instructions

  1. Cook the pasta in accordance with the instructions on the package.
  2. Rinse the pasta in cold water and dry completely.
  3. Combine all of the ingredients for the homemade dressing in a large serving dish.
  4. Add the cooked pasta and the remaining ingredients. Stir to combine.
  5. Serve warm or chill for an hour. A few hours is optimal.

Notes

  • For extra crunch, you can add more vegetables like bell peppers or cucumbers.
  • This dish can be made a day ahead for convenience.
