- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 tablespoons instant coffee granules

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This should take about 3-5 minutes.
- Beat in the eggs, one at a time, ensuring each one is fully incorporated before adding the next. Then add the vanilla extract and mix well.
- In a small bowl, dissolve the instant coffee granules in 1 tablespoon of hot water. Stir until fully dissolved and let it cool slightly before adding it to the butter mixture.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- If desired, fold in chocolate chips or chopped nuts for added texture and flavor.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading as they bake.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

- Adjust the amount of instant coffee to taste for stronger or milder coffee flavor.
- Consider using a mix of dark and milk chocolate chips for enhanced flavor.
