Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This should take about 3-5 minutes.
  3. Beat in the eggs, one at a time, ensuring each one is fully incorporated before adding the next. Then add the vanilla extract and mix well.
  4. In a small bowl, dissolve the instant coffee granules in 1 tablespoon of hot water. Stir until fully dissolved and let it cool slightly before adding it to the butter mixture.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  7. If desired, fold in chocolate chips or chopped nuts for added texture and flavor.
  8. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading as they bake.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers are still soft.
  10. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
