- 1 can creamed corn
- 1 box cornbread mix (like Jiffy)
- 1 cup sour cream
- 1/2 cup melted butter
- 2 large eggs (optional)
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large mixing bowl, combine melted butter and sour cream until smooth.
- Stir in the whole kernel corn and creamed corn.
- Add the cornbread mix and mix just until combined. Do not overmix.
- If using, fold in eggs and any optional ingredients like cheese or jalapeños.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 45–50 minutes, or until golden and the center is set.
- Let it cool for 5–10 minutes before serving.
