Description
This creamy and rich chocolate mousse made with silken tofu is a delicious and healthy treat.
Ingredients
Scale
- 14 ounces silken tofu (soft, slightly pressed to remove water)
- 1 cup dark vegan chocolate chips (melted with 1 tbsp coconut oil)
- 1/4 cup cacao powder
- 1/4 cup pure maple syrup
- 1 pinch salt
- 1 tsp vanilla bean paste (or vanilla extract)
Instructions
- Remove tofu from package and discard water. Place tofu in a paper towel and gently press down to remove excess water. Then cut into cubes and set aside.
- In a medium bowl, add in the chocolate chips and coconut oil and melt in the microwave in 30-second increments until smooth and creamy. Can also melt on the stovetop in a double boiler.
- In a blender or food processor, add in all the ingredients including the melted chocolate and blend until smooth and creamy.
- Pour into containers and top with dairy-free whipped cream and chocolate shavings if desired and enjoy!
Notes
- Ensure tofu is pressed well to achieve a smooth consistency.
- Store leftovers in the refrigerator for up to 3 days.
