Description
Deliciously soft and fluffy chocolate chip muffins, perfect for breakfast or a snack!
Ingredients

- 2 3/4 cup flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter or margarine (melted)
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 3 eggs
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 12 ounce package mini chocolate chips
- coarse sugar (optional)
Instructions
- Preheat oven to 375 F. Spray muffin tray or line with liners.
- Mix together dry ingredients, flour through salt and set aside.
- Mix melted butter and sugars. Stir until well blended.
- Add eggs, one at a time. Mix well.
- Slowly mix in milk and vanilla.
- Gradually add dry ingredients, stirring only until mixed in (do not over mix).
- Mix in chocolate chips.
- Fill muffin cups 3/4 full. Sprinkle with coarse sugar, if using.
- Bake 15-18 minutes or until lightly golden brown and knife inserted comes out clean.
- Serve warm.
Notes
- These muffins can be stored in an airtight container for up to 3 days.
- For added flavor, you can include nuts or substitute chocolate chips with your favorite mix-ins.
