Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 cup pecan halves
  • 1 cup caramel sauce
  • Pinch of salt
  • 1 tsp lemon juice (optional)

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Press the mixture into the bottom of a 9-inch springform pan. Use the back of a spoon to flatten it evenly. Bake for 10 minutes, then set aside to cool.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugars (granulated and brown) on medium speed until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, lemon juice (if using), and flour. Mix until smooth and creamy. Pour the filling over the cooled crust, spreading evenly.
  3. Bake the Cheesecake: Place the springform pan into a larger baking dish. Pour hot water into the larger dish, filling halfway up the sides of the springform pan (water bath). Bake for 1 to 1.5 hours, or until the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open. Remove from the oven, and refrigerate for at least 4 hours, preferably overnight.
  4. Prepare the Topping: Toast pecan halves in a skillet over medium heat until fragrant, about 5 minutes. Let them cool. Once the cheesecake is set, pour caramel sauce evenly over the top. Arrange pecan halves on top of the caramel-covered cheesecake.

Notes

  • Ensure all ingredients are at room temperature for the best texture.
  • Wrapping the outside of the springform pan with foil can help prevent water from leaking into the cheesecake.
