A light and creamy Bavarian dessert topped with a mix of fresh berries.
Ingredients

- 2 cups heavy cream
- 1 ½ teaspoons gelatin
- 1 tablespoon cold water
- 3 egg yolks
- ⅓ cup granulated sugar
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups mixed fresh berries (strawberries, raspberries, blueberries, blackberries)
- 1 tablespoon lemon juice
- 1 tablespoon honey or sugar (optional, depending on berry sweetness)
Instructions
- In a small bowl, combine the gelatin with cold water and let it bloom for about 5 minutes. This softening step ensures the gelatin dissolves smoothly later on.
- In a medium saucepan, whisk together the egg yolks and sugar until pale and slightly thickened. Warm the milk over medium heat until it’s steaming but not boiling. Slowly pour the hot milk into the egg mixture, whisking constantly to temper the yolks.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Be careful not to let it boil.
- Remove from heat and immediately stir in the bloomed gelatin until fully dissolved. Add the vanilla extract. Let the mixture cool to room temperature. You can speed this up by placing the bowl over an ice bath, stirring occasionally.
- In a separate bowl, whip the heavy cream until soft peaks form. Once the custard base has cooled but not set, gently fold in the whipped cream in two additions. The result should be light, airy, and glossy.
- Spoon the Bavarian cream into serving glasses or molds. Cover with plastic wrap and chill for at least 4 hours, or until fully set.
- Just before serving, toss your chosen berries with lemon juice and a touch of honey or sugar if needed. Let them macerate for 10–15 minutes to bring out their juices.
- Top each serving of chilled Bavarian cream with a generous spoonful of the macerated berries. Garnish with a few mint leaves if desired for a fresh touch.
